Ice Cream, like most deserts are not the healthiest of options, but we all deserve the occasional indulgent treat! Mixing the tasty treat with culinary matcha not only enhances the flavour, but also ensures the healthy goodness of the green powder are included. 7 easy steps to making matcha ice cream
Ingredients
2 tbsp culinary matcha powder
130g sugar (granulated)
3x eggs
190ml milk
160ml double cream
Steps to heaven…
- Mix two tablespoons of sugar with the culinary matcha powder in a bowl
- Separate 3 egg yolks and mix in another bowl, with the remainder of the sugar. Add in the matcha powder, stirring well to form a thick green paste.
- Gently heat the milk in a pan, be careful not to over-heat or boil, it just needs warming through. Add a small amount to the matcha mix, again stir until it develops into a smooth paste.
- Gradually add the remaining milk to the rest of the matcha paste. Return to the low-medium heat and stir well.
- Once the mixture is warmed through (not boiled), remove from the heat. Pour all the mix through a sieve or strainer to remove any lumps. Finally, leave the mix to cool down.
- Whip the cream gently and then add into the matcha mixture, turning along the way to mix through. Once it is well mixed, put in a sealed container and place in the fridge to cool for a couple of hours.
- Lastly, once cooled you can move into the freezer. To ensure ice crystals do not form in the ice cream, remove the mix from the freezer every 2 hours and stir well. Repeat this process until the ice cream is completely frozen.
